Ingredients
1½ lb (700 g) baby potatoes, halved
3 tbsp olive oil
3 tbsp butter, melted
4–5 garlic cloves, minced
2 tbsp fresh parsley, chopped
1 tsp dried oregano or Italian seasoning
1 tsp salt
½ tsp black pepper
Instructions
Preheat oven to 425°F (220°C).
Wash and halve the baby potatoes.
In a bowl, mix olive oil, melted butter, garlic, parsley, oregano, salt, and pepper.
Toss the potatoes in the garlic-herb mixture until evenly coated.
Spread potatoes cut-side down on a baking sheet or baking dish.
Roast for 30–35 minutes, turning once halfway through, until golden brown and crispy on the edges.
Remove from the oven and toss with a little extra parsley and garlic butter if desired.
Serve hot.

Grated Parmesan cheese
Fresh rosemary or thyme
A squeeze of lemon juice before serving
